Creamy Raspberry Filling

For my brothers wedding, I was asked to make a chocolate cake with raspberry filling. I searched and searched but still I could not find a creamy raspberry filling that I didnt' have to be a rocket scientist to master. So, I decided to experiment in making my own filling, and came up with this on my first try. The result was a thick and creamy raspberry filling, with a deep raspberry hue. What I loved about this filling is that the jell-o punches up the flavor and color, but helps to stabilize. Everyone who tased this (which I sandwiched between two 8" chocolate cakes and frosted with chocolate butter cream icing) loved it, and I hope you will too!

  • 1 jar Polenta Raspberry Jam (with seeds --I felt it gave it a more "homemade" texture) 1 jar marshmallow FLUFF 1 8oz package cream cheese (softened) 1 4oz package raspberry Jell-o This recipe was enough to fill 2 cakes. (8" round)

Combine the softened cream cheese with about 2/3 jar of the Marshamallow fluff with a handmixer on low, until well mixed. Add 1/2 the jar of the Raspberry Jam and combine until fully incorporated. Add the entire package raspberry Jell-o and mix on high with hand mixer until no longer "grainy". If you have left overs, this can be covered and refrigerated for future use :)

what size jar of fluff?
Since you are using raspberry jam and raspberry Jell-O, I wonder if you could use other flavors together, like peach preserves and peach Jell-O? I'll try it soon!
what size jar of jam? and am i correct in assuming you mean Polaner jam?
Tried it. Tasted yummy, but was runny and I used almost a whole jar of fluff
Never heard of Marshmellow Fluff, is it the same as Marshmellow creme ?
I've only seen 2 sizes of fluff. I used the smaller of the 2 for this recipes and I could've used a tad more fluff. It's a little runny.
Yes, marshmellow cream is the same as fluff. The consistency is a little different but not much. The north has fluff and the south has cream.
this recipe is good, but a bit sweet....maybe cut the jello powder to 1/2 the box
What is Polenta or Plenar jam?
Has anyone figured out what size jars of jam and marshmellow fluff was used?
I used one of my strawberry jams and strawberry received rave reviews from the family
I'm not sure what I did wrong with this recipe, but it liquified and only thickened a tad after almost 12 hours in the fridge. I used strawberry jam... To me this is VERY sweet and we be better for a fruit dip. I couldn't use it on my cake.
You know i just made a chocolate cake with Rasberry, for my son and what is used was the Rasberry Dessert Sauce, and it turned out great!
Marshmellow fluffy is very sweet in and of itself, so I am thinking maybe using unsweetened jam. Maybe All Fruit?? What size jars are we talking about here, has anyone heard yet?
That brand of of fruit spread only comes in one size. It is 100% fruit and only sweetened with fruit juices. I use it to make salad dressings.
And I think she meant Polaner..not Polenta
The spread comes in 10 oz jars where I'm from. I bought the fluff in 7 oz jar which was the only size. YUMMY!!!!! I need to get this in a cake SOON before I eat it all. It is fabulous. The texture is great too. Had to mix for a long time for the JELL-O to incorporate but seems to be good now.
going to try it,sounds yummy!
