Chocolate Mayonnaise Cake

Dense, moist chocolate cake. Not overpoweringly chocolate, so it goes great with chocolate filling and frosting.

INGREDIENTS

2 C. flour
2/3 C. unsweetened cocoa
1 and 1/4 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp salt
3 eggs
1 and 2/3 C. sugar
1 tsp. vanilla
1 C. Mayo
1 and 1/3 C. water

DIRECTIONS

Preheat oven to 350 F.
Grease and flour bottoms of 2 (9×11/2″) round cake pans.
In medium bowl, combine flour, cocoa, baking soda, baking powder, and salt; set aside.
In large bowl with mixer at high speed, beat eggs, sugar and vanilla, scraping bowl occasionally, 3 minutes or until smooth and creamy.
Reduce speed to low; beat in mayo until blended.
Add flour mixture in 4 additions alternately with water, beginning and ending with flour mixture.
Pour into prepared pans.
Bake 30-35 minuntes or until cake springs back when touched lightly in center.
Cool in pans on wire racks 10 minutes.
Remove from pans; cool completely on racks.
Fill and frost as desired.

Makes one 9″ layer cake.

This will be my first time making a choc cake from scratch. Is their a paticular mayo that you used for this reciepe? What about the flour, is it all purpose flour? Any tips for me? Thanks

Mayo is made from egg yolk and oil blended together. Those are both very standard items for a cake recipe.

This cake is absolutely delicious. Very moist, but sturdy enough to stack. I have also made cupcakes with this recipe. Real nice chocolate taste. Will be my go to chocolate cake recipe.

I made this for a birthday cake. I used one and a half quantities to make 3 layers since two layers didnt rise enough in my opinion. The cake was moist and stacked well. On tasting, I thought the cake had too much cocoa powder in it. I asked 4 other people's opinions and they said they thought it was too rich, and could only eat half a slice (I used minimal filling & frosting). The kids didnt like it. I will keep on looking for a great chocolate cake recipe.

I made this receipe as is and thought it was a bit stiff... I just remade it and replace the water by milk and it is a lot better! Very good!
