Buttercookies from patisseriejaja

A great moist shortbread style cookies recipe. That is the one I always use and it is so good. Hope you will enjoy making cookies as much as I do!

Ingredients

  • 1 cup sugar
  • 3/4 cup butter
  • 1 egg
  • 3 tablespoon 35% cream
  • 1 teaspoon almond extract
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. In a large bowl at medium speed cream together butter, sugar, egg, cream and almond extract until you get a light texture. Add the flour, the baking powder and the salt. You will have a great paste. Cover with a plastic (saranwrap) and refrigerate 1 hour until you get a firm texture. Roll down the paste 1/2cm thin. Bake for 4 to 6 minute (do not over cook) in a 400 degrees F (200 degrees Celcius) oven. Cool cookies than cover with you royal icing or buttercream. And enjoy!!!

I tried the recipe and ended up using about 2 1/2 Cups. and then spritzed them. cooked them for 6-8 min.( if you want them softer then go for 6, but if you want a slight crunch then go for 8.) Also think you could add a bit more flour and roll them out. These cookies are not very sweet on there own so you should decide if you want to add more sugar or if any icing you use will end up being just enough. Hope this helps!

I am so sorry, I just saw that I forgot to put the flour in the ingredients... So this is 3 cups of flour or a little bit less, not more for sure. Again, I am sorry for the mistake and hope you will enjoy making these cookies! Happy baking!
