Blueberry Muffins

This is a delicious moist blueberry muffin (or coffee cake) recipe, with a crunchy streusel topping.

Blueberry Muffins


  • * 1 1/2 cups all-purpose flour * 3/4 cup white sugar * 1/2 teaspoon salt * 2 teaspoons baking powder * 1/3 cup vegetable oil * 1 egg * 1/3 cup milk * 1/4 cup sour cream * 1 1/2 cup blueberries (thawed and drained) * 1/2 cup light brown sugar * 1/3 cup all-purpose flour * 1/4 cup butter, cubed * 1 1/2 teaspoons ground cinnamon


  1. 1. Preheat oven to 400 degrees F. Grease muffin cups or line with muffin liners, (or grease 9" round pan).
  2. 2. Combine 1 1/2 cups flour, 3/4 cup sugar, salt and baking powder. Place vegetable oil into a 1 cup measuring cup; add the egg and enough milk to fill the cup. Mix this with flour mixture. Add 1/4 cup sour cream. Fold in blueberries. Fill muffin cups right to the top, and sprinkle with crumb topping mixture.
  3. 3. To Make Crumb Topping: Mix together 1/2 cup brown sugar, 1/3 cup flour, 1/4 cup butter, and 1 1/2 teaspoons cinnamon. Mix with fork, and sprinkle over muffins before baking.
  4. 4. Bake for 20 to 25 minutes for muffins, 25-30 minutes for 9" pan... in the preheated oven, or until done.

These muffins are very delicious! They never last long when they're in the house.
This recipie sounds very tasy, I'm gonna try it today but instead uf cranberies I'll use Blackberries I'll let you know after tasting them ;D
i substituted cream cheese for the sour cream! turned out great!
Tried this one today, but with 1 cup dried cranberries and 1/2 cup chopped white choc, and it's gorgeous! Even my 1 year old daughter kept shouting for more!!
Everyone loved these! However my two daughters didn't care for them because of the largeness of the blueberries. so, i think next time I'll puree the blueberries. But, very tasty recipe. Thank you.
Sounds like a must try recipe!!!! Can anyone tell me how if they get a rather large sized muffin from this and how many???? BTW-definitely going to try with the cranberries and white chocolate;)
