The wraps are made by tempering chocolate and spreading it onto an acetate sheet - to get the ragged top I just use a pastry brush and brush the top of the chocolate while it is still soft on the acetate. When the chocolate starts to set you wrap around your cake and leave to set. For the middle tier I used a chocolate transfer sheet.
